Zoodle With Broccoli and Parmesan


Zoodle With Broccoli and ParmesanZoodle With Broccoli and Parmesan is a variation of the first recipe I tried using a spiralizer.  This variation was a huge hit with my fifteen year old son! We use half zucchini noodles and half squash noodles, but there is no reason why you couldn’t use just one or the other.  Be sure to add extra to make up for the one you don’t use!

TIP:  Have all your ingredients for this recipe (AND your other meal items) ready to go – this recipe cooks up FAST!

TIP:  Try using fresh shaved parmesan, too!

Zoodle With Broccoli and Parmesan

Zucchini and squash noodles combined with broccoli, garlic and parmesan make for a quick veggie based meal that won't have you standing in front of the stove all day!

Ingredients
  • 2 medium zucchini, spiralized
  • 1 medium squash, spiralized
  • 3 cloves garlic, sliced
  • 2 cups broccoli, cut to small pieces
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons butter or ghee
  • salt, to taste
  • black pepper, to taste
Directions
  • Step 1 In a large skillet over medium-high heat, melt the butter and add the garlic.
  • Step 2 Cook garlic for 1-2 minutes.
  • Step 3 Add the broccoli. Cook 3-4 minutes.
  • Step 4 Add the spiraled zucchini and squash noodles. Mix and cook for 2-3 minutes.
  • Step 5 Stir in the parmesan cheese, and mix to coat everything.
  • Step 6 Add pepper and salt to taste.
  • Step 7 Remove from heat and serve.
