Apple Pie Overnight Oatmeal


Apple Pie Overnight OatmealI was a little nervous to try the Apple Pie Overnight Oatmeal when I first made it, because I have “texture issues”.  When I grabbed my mason jar from the fridge in the morning, I was pleasantly surprised! My apples stayed firm, and the oats were the same consistency as cooked oats. Yay!

TIP: Heat this before serving for a cold winter morning warm up!

TIP: This is a great way to use up that apple that isn’t quite crunchy enough to eat by itself, but not ready to hit the compost pile.

Apple Pie Overnight Oatmeal

Go to bed knowing you have a delicious and healthy breakfast ready for you in the morning!

Ingredients
  • 1/2 cup oats
  • 1/2 cup apple sauce
  • 1/3 cup sweetened vanilla almond milk or vanilla cashew milk
  • OR: 1/3 cup regular unsweetened almond milk plus 1 teaspoon honey and 1/4 teaspoon vanilla
  • 1/2 teaspoon apple pie spice
  • 2 tablespoons chopped walnuts (optional)
  • 2 tablespoons chopped apple (optional)
Directions
  • Step 1 Add the oats to a lidded container like a mason jar.
  • Step 2 Add the almond milk, applesauce, and spices. Stir until completely mixed together.
  • Step 3 Add the walnuts and apple pieces, if you’re using them.
  • Step 4 Put the lid on the container and place into the refrigerator for 6-8 hours.
  • Step 5 TIP: You can serve this one hot or cold!
